Background information
Maher Al Sabbagh (1964), born in Damascus (Syria), the oldest city in the world, is a filmmaker and traveling chef.
From an early age, Maher could be found in the kitchen; his grandmothers taught him their cooking secrets at the age of seven. From his thirteenth onwards, he has been working in the kitchens of professional restaurants and patisseries in the Middle East. Maher has worked in Damascus, Beirut, Amman, Isfahan, Cairo, Rome, Sicily, Milan and recently in Rotterdam. He still regularly makes culinary expeditions in search of food from the ancient world.
"My interest goes out to the traditional cuisine of the world, especially the cuisine of the region where I am from: ancient Mesopotamia and the Mediterranean. I want to infuse the wood-fired oven at Marres with the flavors and colors from these areas and present the results to you."
